Every year, Cambodian pepper is usually harvested by hand from January to June, ending when the southwest monsoon brings the rainy season from mid-May. Among the pepper varieties grown in Cambodia, Kampot pepper is the most highly valued and is the only variety protected under the national geographical indication (GI).
